Blueberry Sour Cream Pie Recipe
Ingredients:
1 & 1/4 c of flour plus 8 & 1/2 Tbsps
4 Tbsps of sugar (granulated)
1/2 c of butter; unsalted
1/4 tsp of salt
4 Tbsps of cold water
1 c of sourcream
3/4 c of sugar
3/4 tsp of extract (almond)
2 & 1/2 c of fresh blueberries
1/3 c of pecans; chopped
1 large egg
Instructions:
Combine 1 & 1/4 c flour, 1/4 c butter, 2 Tbsps sugar & pinch salt in processor. You add the water then mix ’til well incorporated. Have pastry rolled onto disc in floured working surface then fit in pie-plate.
Freeze about 10 mins then cover w/ foil & weights. Have it baked for about 12 mins at four hundred degrees Fahrenheit ’til set. Have the foil & weights removed once done.
Combine sourcream, 3/4 c sugar, 2 & 1/2 Tbsps flour, egg, extract, salt & bluebrries. Blend well then pour over prepared crust. Have it baked for about 25 mins ’til set.
Combine 6 Tbsps flour, 1/4 c of butter, & 2 Tbsps of sugar in pastry-blender. Have the pecans added, stir. Pour over your pie then bake it for 12 more mins ’til browned lightly. Cool.
