Canadian Pork Pie (Tourtiere) Recipe
Ingredients:
1 lb of pork (ground)
1/2 lb of beef (ground)
1 onion (medium); chopped
1/2 c of water
1 garlic clove; chopped
1/4 tsp of pepper
1 & 1/2 tsps of salt
1/4 tsp of sage (ground)
1/2 tsp of dry leaves of thyme
1/8 tsp of cloves (ground)
2/3 c shortening plus 2 Tbsps
1 slightly-beaten egg
2 c of flour (all-purpose)
2-3 Tbsps of ice water
Instructions:
For the egg pastry: Combine salt & flour then blend shortening in ’til it appears to be like small-sized peas. Combine 2 Tbsps of water w/ egg then add into flour-mixture ’til moistened.
Have pastry formed into ball then divide it into half then shape it into two flat rounds. You place 1 round in floured & cloth covered rolling-pin. You fold the pastry to quarters, then unfold & fit into pie pan.
Pour fillin into pastry then trim edges leaving 1/2-inch allowance. You roll the other pastry. You fold it into quarters, slice slits then place above filling & unfold. You trim leaving 1-inch allowance from edges. Fold & roll the top edges under the lower edges, press rim & seal.
For the filling: You combine pork, beef, water, garlic, seasonings & herbs. Allow to boil & cook. Stir often then reduce the heat. Continue cooking for 5 mins ’til meat turns light-brown.
Pour the meat-mixture into pastry, cover, & seal. Have the edges covered w/ 3″ foil strip 15 mins before baking is completed. Bake at preheated 425-degrees F oven for 35-40 mins ’til crust browns. Cool for 10 mins prior to slicing.
