Cantaloupe Pie Recipe
Ingredients:
1 pc of cantaloupe (cooked); mashed pulp
1/2 c of sugar (granulated)
8 Tbsps of flour; sifted
1/4 tsp of salt
1 Tbsp of butter (unsalted)
1 pc of pie crust (baked)
2 Tbsps of water
3 pcs of egg yolks (large)
For the Meringue:
3 pcs of egg whites (large)
1/4 tsp of cream-of-tartar
6 Tbsps of sugar (granulated)
Instructions:
Combine sugar, flour, and salt; add onto the hot mashed pulp; mix thoroughly till thick. Combine water and yolks; beat thoroughly then gradually add mixture of cantaloupe and heat. Continue to cook till creamy and thick, while stirring constantly. Add the butter then pour onto the crust.
Combine egg whites and tartar; beat thoroughly till almost stiff. Gradually add the sugar, while beating continuously. Continue beating till glossy and stiff. Spread above the filling and seal the edges.
Bake inside preheated oven (400 degrees F) till browned on the surface.
