Apricot Pie Recipe
Ingredients:
4 c of apricots; freshly sliced
1 c of white sugar
Nutmeg (ground)
1/3 c of flour (all-purpose)
1 Tbsp of juice (lemon)
Double crust (9-inch) pastry
Milk
Sugar, if needed
Instructions:
Toss sugar, nutmeg, flour along w/ apricots in mixing bowl. Sprinkle w/ juice then mix thoroughly. Press on pie pan (9-inch); add in filling. Next, roll the rest of the pastry for a lattice-crust.
Next, place it over the filling and seal then flute the edges. Then, brush w/ milk; sprinkle w/ sugar. With a foil, loosely cover the pastry edges. Bake over 375 deg F about 45 – 55 mins or ’til golden-brown.

Pineapple Cheese Pie Recipe
Ingredients:
16 oz of softened creamcheese
1 c of icing sugar
1/4 tsp of extract (almond)
1 tsp of extract (vanilla)
1 c of whipped cream
8 oz of pineapples; crushed
Graham-cracker crust
Instructions:
Beat creamcheese, extracts & vanilla together ’til smoothened. You then add the pineapples. Then pour this mixture into prepared crust. You whip the cream w/ sugar then pipe beautifully over pie prior to serving.

Crackling Coconut Cream Pie Recipe
Ingredients:
1/4 tsp of salt
3 Tbsps of cornstarch
1-2/3 c of water
14 oz of canned condensed milk (low fat or regular, sweetened)
4 pcs of egg yolks (large)
1/2 c of toasted of coconut flakes (sweetened)
1 pc of frozen pie crust; baked then cooled
1 tsp of vanilla extract
2-3 c of cream (whipped)
Additional coconut flakes
Mango sauce
Instructions:
Dissolve the salt and cornstarch with water. Add yolks, coconut, and condensed milk; cook above moderate heat till bubbly and thick, while constantly stirring. Take out from the heat then add vanilla; stir thoroughly. Pour onto the crust and let it cool.
Place inside the refrigerator, covered, for 3-4 hours till chilled. Spread the cream above the filling then sprinkle coconut. Serve along with mango sauce if preferred.

Raspberry Meringue Pie Recipe
Ingredients:
1-1/4 c of flour; sifted
1/4 tsp of baking-soda
1/3 c of white sugar
1/2 c of margarine
1 tsp of vanilla flavor extract
2 pcs of eggs; beaten
1/4 c of white sugar
1/4 tsp of salt
2 pcs of whites of egg
1 pack of raspberries (frozen, 10 ozs)
2 Tbsps of cornstarch
2 Tbsps of white sugar
1/2 c of walnuts; roughly chopped
Instructions:
Sift baking-soda, salt and flour together. Then, cream the margarine w/ 1/3 c of sugar, put in vanilla-flavor extract and beat yolk in. Then, add the ingredients sifted earlier then press onto 1″ pie pan.
Mix cornstarch and 1/4 c of sugar into saucepan; put in raspberries. Then, cook on low stove heat ’til it thickens. Pour onto mixture inside the pie pan. Top w/ walnuts.
Meanwhile, beat whites then add in 2 Tbsps of sugar. Next, spread onto walnuts. To finish, bake over 350 deg F about half an hour. Serves 6

Lemon Chess Pie Recipe
Ingredients:
1.5 c of white sugar
3 pcs of eggs; well-beaten ’til light
1/4 c of fresh juice (lemon)
1/2 tsp of lemon rind
1/8 tsp of salt
3 Tbsps of butter; melted
1 pastry shell (8-inch)
Instructions:
Combine butter, salt, lemon rind and juice, sugar and eggs thoroughly. Pour in to unbaked pastry shell. To finish, bake over 350 deg F for 35 – 40 mins or ’til well-browned.

Orange Meringue Pie Recipe
Ingredients:
1 c of white sugar
1.5 c of chilled water
1/4 c of sour juice (orange)
1/4 c of cornstarch
3 yolks of eggs; beaten
1 tsp of margarine
1/3 c of white sugar
1 pie crust shell (9-inch); baked
3 whites of eggs
Instructions:
Preheat the oven (350 deg F). Combine 1 c of cornstarch and sugar in medium saucepan. Stir gradually into water ’til smooth. Blend in yolks.
Constantly stir on medium stove heat and bring to boil. Then boil about 1 min. Take the pan off the heat. Put in margarine along w/ juice; stir well.
Pour mixture onto pie crust. Meanwhile, in separate bowl, beat whites on high blender speed ’til foamy. Slowly beat 1/3 c of sugar in, continue to beat ’til stiff-peaks form.
Then, meringue onto hot pie filling. To finish, bake about 15 – 20 mins ’til meringue turns golden-brown. Cool then refrigerate or freeze.

Apricot Cream Pie Recipe
Ingredients:
3-1/2 c of canned apricots (peeled)
1 canned milk (condensed, sweetened)
3 Tbsps of juice (pineapple)
1/4 c of juice (lemon)
1 pc of pie crust (Graham)
1 c of cream (whipping)
Instructions:
Drain the apricots and mash them. Add condensed milk and juices; mix thoroughly. Transfer onto the crust and place inside the refrigerator to chill for overnight. Place cream on top.
