Berry Cheesecake Pie Recipe
Ingredients:
3 c of finely-ground Graham-crackers
3/4 c of melted butter
3 Tbsps of raspberry/strawberry gelatin
12 oz of softened creamcheese
1/3 c of water
14 oz of sweetened milk (condensed)
1 c of shaved milk-chocolate
3/4 c of thick cream
1 Tbsp of sugar (granulated)
2 Tbsps of liqeuer (strawberry/raspberry)
1/4 c of raspberries (fresh) or strawberry halves
Instructions:
Have oven preheated to three hundred fifty degrees Fahrenheit. For the crust: you combine butter in crumbs then stir ’til moistened evenly. Lightly press this into sides & bottom of 9″ pie pan. Have it baked about 10 mins then transfer into racks to cool.
For the filling: You sprinkle the gelatin all over water then leave for 3 mins ’til gelatin softens. Have it heated over mid-heat ’til gelatin melts & liquid turns clear. Slightly cool.
Beat creamcheese in bowl ’til creamy & smooth. Add the milk then beat continuously ’til smooth. Set on low-speed then drizzle gelatin-mixture. Adjust to mid-speed then beat for additional 2 mins ’til smoothened.
In another bowl, you beat 3/4 c thick cream at mid-speed ’til foamy. Adjust to mid-high then beat ’til soft-peaked. Fold the whipping cream & chocolate shavings in gently into creamcheese-mixture. You spoon this mixture onto crust then refrigerate for 4 hrs ’til firm.
For the garnish: Beat sugar & 1/2 c thick cream ’til soft peaked. Drizzle w/ liqeuer then beat at mid-high speed ’til stiff-peaks are formed. Place in piping bag w/ star-tip. Start piping rosettes atop cheesecake then garnish w/ strawberries or raspberries.

Steak and Onion Pie Recipe
Ingredients:
1 c of onions; sliced
1/4 c of shortening; melted
1/4 c of flour (all-purpose)
2 tsps of salt
1/2 tsp of paprika
1/8 tsp of pepper
A dash of ginger (ground)
A dash of all-spice (ground)
1 lb of rounded steak; sliced into inch-sized squares
9-inch pastry pie
2 c of potatoes; diced
Instructions:
Have onions sauteed in heated shortening, then set it aside. Mix all-spice, ginger, paprika, pepper, salt & flour. Dredge the meat into flour-mixture. Cook in heated shortening ’til browned.
You add enough water then simmer w/ cover for 60 mins ’til meat becomes tender. Add potatoes then continue simmering w/ cover for about 15 mins ’til cooked.
You pour onto buttered 1 & 1/2-qt casserole then add onion above. Place pastry atop then have the edges sealed. Create slits so that steam comes out freely.
Have pie baked for four hundred fifty degrees Fahrenheit for about 25 mins.

Jim’s Key Lime Pie Recipe
Ingredients:
1 Graham-Cracker crust
2 medium cans of sweetened milk (condensed, Eagle)
3 eggyolks
1/4 tsp of oil (lime)
1 pack of gelatin (unflavored)
1 c of lime-flavored juice (Nellie and Joe’s Hey-West); separated
Instructions:
Combine yolks, oil & milk, blend well. Pour in 3/4 c lime-juice then set mixture aside. Have rest of lime-juice heated in your microwave ’til very hot.
You whisk gelatin onto heated juice, stir to avoid lumps. You add this mixture into filling using mixer set at high-speed.
Blend ’til everything is incorporated well then pour this over crust. Chill for 4 hrs ’til set. You add the topping & serve.

Chicken Pie with Sweet Potato Crust Recipe
Ingredients:
3 c of diced chicken; cooked
1 c of carrots; cooked & sliced
6 cooked onions (white)
1 Tbsp of parsley; chopped
3 Tbsps of flour
Salt
1 c of milk
Pepper
1 c of chicken stock
1 tsp of baking-powder
1/3 c of shortening
1 c of potatoes; mashed
1 well-beaten egg
Instructions:
For the crust: You combine the salt, baking-powder & flour then blend shortening in ’til mixture appears to be like that of coarsemeal.
You add the egg & cold potatoes, blend well. You roll the dough into floured working surface into 1/4″ thick. Have this placed over veggies & chicken inside your casserole.
You layer the parsley, onions, carrots & chicken in butter 2 & 1/2-qts casserole. Mix some milk & flour in saucepan, blend ’til smooth. Stir milk gradually then add stock.
Cook mixture over low-heat, stir ’til thickened. Season w/ pepper & salt then pour this over veggies & chicken inside casserole. Have them covered w/ sweet-potato crust. Have pie baked at three hundred fifty degrees Fahrenheit for 45 mins.

Lemon Meringue Pie Recipe
Ingredients:
1 pie crust (9 inch); baked
1.5 c of white sugar
3 pcs of yolks of eggs; beaten slightly
1/3 c plus a Tbsp of cornstarch
2 tsps of lemon zest; grated
1.5 c of water
1/2 c of juice (lemon)
3 Tbsps of butter or margarine
2 small drops of food color (yellow)
1/2 tsp of vanilla flavor extract
3 pcs of whites of egg
1/4 tsp of cream-of-tartar
6 Tbsps of white sugar
Instructions:
Preheat the oven (400 deg F). Combine cornstarch and sugar in a 1.5-quart saucepan. Gradually stir water in.
Cook on medium stove heat, constantly stirring ’til mixture boils and thickens. Boil then stir for 1 min. Gradually stir 1/2 of mixture into the yolks.
Next, blend in hot mix in the saucepan and boil; stir for 1 min. Remove pan from the heat. Then, stir lemon zest and juice, food color and margarine in. Pour onto pie crust.
For the meringue, beat whites w/ cream-of-tartar ’til foamy and beat sugar in, a Tbsp at each time. Beat continuously ’til glossy and stiff. Make sure not to under-beat. Then, beat vanilla in.
Carefully spread meringue onto filling, sealing edges of the crust w/ meringue. Bake for 10 mins ’til delicately brown. Take out from oven and cool.

Souper Meat and Potatoes Pie Recipe
Ingredients:
1/4 c of onion
A can cream-of-mushroom soup
1 lb of beef (ground)
1/4 c of fine dried breadcrumbs
2 Tbsps of parsley
Pepper
Salt
2 c of potatoes; mashed
Shredded cheese (Cheddar)
1 large egg
Instructions:
Combine soup, beef, onion,egg, crumbs & parsley, blend thoroughly. You press the mixture into 9″ pie pan. Have it baked for about 25 mins at three hundred fifty degrees Fahrenheit.
Top w/ potatoes then w/ cheese. Continue baking for few mins more ’til cheese melts & potatoes are heated through.

Apricot Cream Pie Recipe
Ingredients:
3-1/2 c of canned apricots (peeled)
1 canned milk (condensed, sweetened)
3 Tbsps of juice (pineapple)
1/4 c of juice (lemon)
1 pc of pie crust (Graham)
1 c of cream (whipping)
Instructions:
Drain the apricots and mash them. Add condensed milk and juices; mix thoroughly. Transfer onto the crust and place inside the refrigerator to chill for overnight. Place cream on top.
