Huckleberry Cheese Pie Recipe
Ingredients:
1 & 1/4 c of flour (all-purpose)
1/2 c of melted butter
1/2 c of icing sugar pus 5 tsps
3/4 c of sugar (granulated)
4 c of fresh huckleberries
1/4 c of cornstarch
1/3 c water
8 oz creamcheese
1 Tbsp juice of lemon
1 tsp of lemon rind; grated
1 tsp of extract (vanilla)
1 c of whipped cream
Instructions:
For the base: You combine 5 tsps icing sugar w/ flour. Cut butter in then lightly press mixture into sides & bottom of 2 nine-inch pie pans. Have them baked for about 8-10 min at three hundred seventy-five degrees Fahrenheit ’til golden-browned. Have them cooled in racks.
Topping: You mix cornstarch & 3/4 c sugar in saucepan, blend in water & berries. Stir while cooking over mid-heat ’til boiling. Allow to boil about 2 mins then cool.
Filling: Beat creamcheese, juice, sugar, zest & extract ’til fluffy & light. Fold the whipping cream in. You spoon one-half of mixture into every crust then pour over some topping all over the filling. Place in your fridge & chill for 60 mins.
