Raspberry Meringue Pie Recipe
Ingredients:
1-1/4 c of flour; sifted
1/4 tsp of baking-soda
1/3 c of white sugar
1/2 c of margarine
1 tsp of vanilla flavor extract
2 pcs of eggs; beaten
1/4 c of white sugar
1/4 tsp of salt
2 pcs of whites of egg
1 pack of raspberries (frozen, 10 ozs)
2 Tbsps of cornstarch
2 Tbsps of white sugar
1/2 c of walnuts; roughly chopped
Instructions:
Sift baking-soda, salt and flour together. Then, cream the margarine w/ 1/3 c of sugar, put in vanilla-flavor extract and beat yolk in. Then, add the ingredients sifted earlier then press onto 1″ pie pan.
Mix cornstarch and 1/4 c of sugar into saucepan; put in raspberries. Then, cook on low stove heat ’til it thickens. Pour onto mixture inside the pie pan. Top w/ walnuts.
Meanwhile, beat whites then add in 2 Tbsps of sugar. Next, spread onto walnuts. To finish, bake over 350 deg F about half an hour. Serves 6
