Rhubarb Cream Cheese Pie Recipe
Ingredients:
4 c of rhubarb; sliced into inch-sized pcs
3 Tbsps of cornstarch
Sugar (granulated)
1/4 tsp of salt
1 unbaked pastry crust (9-inch)
2 large eggs
8 oz creamcheese
1 c of sourcream
Almonds
Instructions:
Cook the cornstarch, 1 c sugar, salt & rhubarb in saucepan placed over mid-heat, stir occasionally ’til mixture will boil & starts to thicken.
Have oven preheated to four hundred twenty-five degrees Fahrenheit. You pour the rhubarb-mixture onto crust then have pie baked for about 10 mins. Remove pie from the oven.
Beat eggs, 1/2 c sugar & creamcheese in mixing bowl. Beat ’til smoothened then you pour the rhubarb-mixture in. Adjust oven temp to three hundred fifty degrees Fahrenheit then have pie baked for 30-35 mins ’til set.
Completely cool then chil. Spread sourcream atop pie then garnish w/ almonds before you serve.
