Rhubarb Custard Pie Recipe
Ingredients:
3 large eggs; beaten
2 c of sugar (granulated)
3 Tbsps of milk
1/4 c of flour
4 c of rhubarb; sliced into 1-3 pastry
1 c flour plus 3 Tbsps
1/2 tsp of salt
2 Tbsps of ice water
1/3 c of veggie oil
Instructions:
Combine salt & flour then blend the oil in using your fork. Then sprinkle w/ water, blend & mix ’til formed into dough. Have this dough formed into ball then slightly flatten.
Roll the dough onto rounds between 2 square-sheets of waxpaper. You peel the paper on top then place in 8-9″ pie plate.
Combine milk & eggs then blend rhubarb in. Mix thoroughly then pour this mixture into pastry-shell in pan. Cover w/ the other dough half forming the lattice.
Have pie baked at three hundred seventy-five degrees Fahrenheit for 50-60 mins ’til browned nicely.
